The Real Easter Egg Basket

The Real Easter Egg Basket is a Puerto Rican egg farm owned by Veronica Martinez launched in January of 2024. Already a mainstay at Puerto Rican farmer's markets, the farm was referred to us as part of a first round of micro-loans through a partnership with Monte Azul Foundation. Foodshed Capital was proud to support Veronica as she grows her thriving egg business with the addition of quail eggs.


A 0% interest micro-loan provided The Real Easter Egg Basket with all the capital needed to launch this new enterprise: a commercial refrigerator; new hen transport crates; egg cartons, packaging, and promotional materials; 200 new chicks; a stainless steel work surface; bulk poultry feed; and even vet support.


This loan followed a May 2025 visit by FoodCap staff to Puerto Rico, where we met partner farmers, expanded our understanding of regenerative practices in a tropical climate, and gained insight into the challenges and opportunities Puerto Rican farmers face as a U.S. territory vulnerable to extreme weather.
